Using a mandolin, very thinly slice it into crescents (Note: you don\u2019t need to core the fennel bulb when you\u2019re slicing it this thinly). If you have the fennel fronds, roughly chop them.<\/li>\n\n\n\n<li>Submerge fennel slices and fronds in the ice water while you prepare your vinaigrette; this gets them nice and crunchy.<\/li>\n\n\n\n<li>In a small bowl, whisk sugar, salt, citrus juice, olive oil, and Dijon together.<\/li>\n\n\n\n<li>Remove fennel from ice water and transfer to a bowl. Pour vinaigrette over and add onions, zest, and herbs. Toss until well combined.<\/li>\n<\/ol>\n\n\n\n<h2 class=\"wp-block-heading\">Pickled Red Onions<\/h2>\n\n\n\n<h4 class=\"wp-block-heading\">What You\u2019ll Need<\/h4>\n\n\n\n<ul class=\"wp-block-list\">\n<li>1 large red onion, very thinly sliced<\/li>\n\n\n\n<li>1\u20442 cup distilled white vinegar<\/li>\n\n\n\n<li>2 tablespoons sugar<\/li>\n\n\n\n<li>1 tablespoon kosher salt<\/li>\n\n\n\n<li>1\u20442 cup ice cubes<\/li>\n<\/ul>\n\n\n\n<h4 class=\"wp-block-heading\">Directions<\/h4>\n\n\n\n<ol class=\"wp-block-list\">\n<li>Add sliced onions to a heat-proof jar with a lid.<\/li>\n\n\n\n<li>In a medium saucepan, bring vinegar, sugar, and salt to a simmer, whisking until salt and sugar are dissolved. Remove from heat and stir in the ice cubes.<\/li>\n\n\n\n<li>Pour mixture over the sliced onions in the jar. Cover and refrigerate at least 1 hour and up to 2 weeks. Save brine for vinaigrettes!<\/li>\n<\/ol>\n\n\n\n<figure class=\"wp-block-image size-large\"><img loading=\"lazy\" decoding=\"async\" width=\"1024\" height=\"640\" src=\"https:\/\/livunltd.comwp-content\/uploads\/2020\/07\/8-1024x640.png\" alt=\"\" class=\"wp-image-14063\" srcset=\"https:\/\/livunltd.com\/wp-content\/uploads\/2020\/07\/8-1024x640.png 1024w, https:\/\/livunltd.com\/wp-content\/uploads\/2020\/07\/8-300x188.png 300w, https:\/\/livunltd.com\/wp-content\/uploads\/2020\/07\/8-768x480.png 768w, https:\/\/livunltd.com\/wp-content\/uploads\/2020\/07\/8-1536x960.png 1536w, https:\/\/livunltd.com\/wp-content\/uploads\/2020\/07\/8.png 2000w\" sizes=\"auto, (max-width: 1024px) 100vw, 1024px\" \/><\/figure>\n\n\n\n<h2 class=\"wp-block-heading\">Coleslaw<\/h2>\n\n\n\n<h4 class=\"wp-block-heading\">What You\u2019ll Need<\/h4>\n\n\n\n<ul class=\"wp-block-list\">\n<li>1 cup mayonnaise<\/li>\n\n\n\n<li>1 cup full-fat Greek yogurt<\/li>\n\n\n\n<li>1\/3 cup Dijon mustard<\/li>\n\n\n\n<li>2 tablespoons apple cider vinegar<\/li>\n\n\n\n<li>juice of 1\u20442 a lemon<\/li>\n\n\n\n<li>1\u20442 a small head green cabbage, cored and shredded<\/li>\n\n\n\n<li>1\u20442 a small head purple cabbage, cored and shredded<\/li>\n\n\n\n<li>2 large carrots, peeled and shredded<\/li>\n\n\n\n<li>1 small shallot, peeled and very thinly sliced<\/li>\n\n\n\n<li>salt and pepper, to taste<\/li>\n<\/ul>\n\n\n\n<h4 class=\"wp-block-heading\">Directions<\/h4>\n\n\n\n<ol class=\"wp-block-list\">\n<li>In a large bowl, whisk the first 5 ingredients together until smooth.<\/li>\n\n\n\n<li>Add shredded vegetables to bowl and toss until completely covered in dressing.<\/li>\n\n\n\n<li>Season with salt and pepper to taste.<\/li>\n<\/ol>\n\n\n\n<h2 class=\"wp-block-heading\">Pickled Veggie Slaw<\/h2>\n\n\n\n<h4 class=\"wp-block-heading\">What You\u2019ll Need<\/h4>\n\n\n\n<ul class=\"wp-block-list\">\n<li>4-5 cups of any shredded firm vegetables you have\u2014we like using a mix of peeled carrots, cucumbers, radishes, and red onion.<\/li>\n\n\n\n<li>1 cup distilled white vinegar<\/li>\n\n\n\n<li>4 tablespoons sugar<\/li>\n\n\n\n<li>2 tablespoons kosher salt<\/li>\n\n\n\n<li>1 cup ice cubes<\/li>\n<\/ul>\n\n\n\n<h4 class=\"wp-block-heading\">Directions<\/h4>\n\n\n\n<ol class=\"wp-block-list\">\n<li>Add shredded vegetables to a large heat-proof jar with a lid (you may need to divide between 2 jars).<\/li>\n\n\n\n<li>In a medium saucepan, bring vinegar, sugar, and salt to a simmer, whisking until salt and sugar are dissolved.<\/li>\n\n\n\n<li>Remove from heat and stir in the ice cubes.<\/li>\n\n\n\n<li>Pour mixture over the shredded vegetables in the jar. Watch them carefully!
